Snack food is typically the first thing that has to get thrown out the window for those with a long list of food sensitivities. While I typically don’t crave carbs anymore- I was pretty thrilled when I came up with this little recipe idea. These crunchy little morsels are the perfect combo of sweet and salty.
I follow a sugar free diet- hence the use of stevia. If you don’t care about sugar free- any other granulated sugar can be used (to taste.)
Curried Coconut Flake “Chips”
2 Cups Large Coconut Flakes
1 Packet Stevia (1 gram)
1 Tsp Curry Powder (I used garam masala)
Salt to Taste
Combine all ingredients in a dry skillet. Cook medium-high 5-8 minutes until toasted and golden. Let the “chips” cool. They will gain their crunchy texture as they cool.

Yum! Looks delicious – and you could do so many flavors with it. Cinnamon chips for sweet snacking. Taco-type seasoning for Mexi food. Delicious!

These looks great! I don’t think I’ve seen large coconut flakes at my local co-op, and certainly not at our regular grocery stores. Where do you find them?

Wow, how inspired and yet simple. I’ve got just about 2 cups of large coconut chips from Tropical Traditions left so I’ve got try this. Sounds like a perfect snack all by itself but I think I’ll try it as a special garnish next time I make Sri Lankan Cashew Curry. Beautiful blog and wonderful, nourishing recipes!
Just made a batch with curry seasoning & pink sea salt. Had to hide them so Jim wouldn’t eat them all! Keep inspiring us!
I assume you used unsweetened flakes since you added stevia?? Just want to make sure I get it right!!
